Happy Mother's Day

Almost 8-years-ago I become a mother of an amazing little boy. He is such a huge part of my world and I wouldn't change a single thing. I love him more than anything in the world.

Becoming a mother was one of the greatest joys I have ever felt. Unless you are a parent of your own, you can't begin to imagine that wonderful feeling the first time you meet your child. Words cannot begin to describe that feeling. 

I am reminded of that feeling every time my son tells me he loves me, or hugs me out of no where.

That feeling makes all the sleepless nights and less-than-pretty parenting moments all worth it! 

My son amazes me everyday with his kind heart, intelligence, humor, maturity, and wonderful morals. 

I feel very lucky to have such a special child. 

From the moment he was born I knew that God had sent me a special gift from Heaven. I try my hardest every day to enjoy my gift and never take it for granted.

Thank you God and thank you Tevon for making me a very happy Mommy everyday!

30 minute Tupperware meal!

Tupperware has the most amazing piece of cookware that I have ever seen, and I'm not just saying that to make a sale. Lol! The Tupperware Stack Cooker is the most used piece in my whole kitchen. Well I guess that and the microwave. Lol! You can cook just about anything in this thing. You can make steak or you can make a cake. I will try to post some demonstrations on this blog so that you can see how easy it really is. The best part about this is that it is on sale right now. Typically, it is $138, right now it is on sale for only $65 in honor of May being Tupperware's 65th birthday. You can't beat that deal! If you buy it from me at the $65 price I will also enter you in a drawing I am having for a free piece of Tupperware when I have 65 orders in the month of May.

So anyways, Here is one recipe that you can use in the stack cooker. I made chicken Alfredo. It got two thumbs up!

First you take frozen chicken breast and place it in the 3 qt. container with a little bit of water. I filled it up about halfway with water. You can use chicken that is already thawed out and it won't take as long to cook but I never prepare that far ahead. Lol!

Then you take the 1 3/4 qt. container and colander and fill it will bow-tie pasta and water and stack it on top of the chicken.

Next you take one can of peas (do not drain) and place it in the 3/4 qt. container. Add just enough water to cover the peas. Stack this on top of the pasta and cover it with parchment paper.

Put all of this in the microwave. I typically cook at 5 minute increments just because I am horrible about over cooking or burning stuff. The peas were done at the first 5 minute check so I just pulled them off and placed the parchment paper over the pasta. Once the pasta was done, I pulled it off and placed the parchment paper over the chicken and cooked it until it was fully done.

I then pulled the colander up, which drained the pasta then dumped the water and put the pasta back in the 1 3/4 qt. container. I used the colander to drain the peas then added them to the pasta. Next I poured the Alfredo sauce over the pasta and peas. I added a little bit of extra garlic just because I love garlic but you can leave that out if you want.

Next I cut up the chicken to bite size pieces and added it to the pasta mix.

Last I put the whole dish back in the microwave for about 1 to 1 1/2 minutes to get all of the flavors to mix a little better.

The nice thing about the stack cooker is that all of the pieces can go straight into the dishwasher so it's easy cooking and easy clean-up. Also if you have extras, like I always do, it comes with an air tight, liquid tight seal you can pop it on and toss it in the fridge for lunch or dinner the next night.

First Communion

Tevon made his First Communion yesterday. I am so proud of him. He knew exactly what to do, he was so well behaved during mass, and he looked so adorable in his little suit.

He has grown up to be such an amazing little kid. He takes his religion very seriously. I couldn't be more proud of the young man he has become.

It was hard to watch him make that big step yesterday because it is just a reminder of how big he is getting but also proud because it is such an important part of growing up.

I love my little boy to the moon and back!

Easter crafts

Today I had Princess, and Joey came over with my Godson B. We all colored Easter eggs together and made chocolate covered pretzel bunnies. Tevon loved helping with the bunnies and taking pictures. I swear, if you put him in charge of a camera to take pictures for you, he will take a minimum of 200. You won't miss a single moment. Lol! It was a pretty great day!

I sure love Princess, watching her "talking" to B and trying to hold his hand today was too precious. I wish I had my camera man for that one but of course that is when he took a "break". Lol!

I hated to see Princess leave but I got some one on one time (holding him) with B for a short time before he had to leave to go see his Nini and Pop.

Now it's time to crash! Lol! Getting up at 6:00 a.m. and staying busy, busy all day wore me out. No doubt that I will sleep well tonight. Lol!

Church Retreat

Saturday, Tevon had a church retreat for second grade to prepare him for First Communion.

We made prayer rocks, a stained glass window, a quilt piece for the hallway at church and colored invitations.

Our favorite part was a tour of the church with Richard. He was great with the kids and I felt like we all, parents included, really learned a lot. I wish we could have kept going but we only had an hour.

It was a great day, and Tevon and I got to spend some one on one time with each other which was great.

Princess

Addison is my little Princess. I love this little girl like she was my own. This is my childhood "brother" and his wife, Lesley's little girl. Is she not the cutest?!

I get to babysit her two days a week, and those are my favorite days of the week now. I love watching her grow and learn but most of all I love watching her and Tevon interact together. He LOVES her! He is always wanting to feed her, and play with her. Now if I can only get him to change her poopy diapers, I would be set. Lol!





Busy, busy, busy!!!!!!

Sorry I haven't posted in a while, I know that I said I would more often but I have been super busy. I have found a chiari specialist in Cincinnati, Ohio that is going to review Tevon's case. I am trying to get him to see a endocrinologist about a possible growth hormone deficiency and I have had to track down medical records from every where to get this much done. Whew! That was exhausting enough. Lol!


I have been working on Cub Scout stuff, and I have started babysitting, and working on Tupperware. In the mean time, I am still homeschooling and have a very active 7-year-old that can't sit still for very long.

I wonder how I was able to work a full-time job at one time.

Hopefully, I can get some answers about Tevon very soon. I am hoping and praying the he does not have to have the surgery for his brain. I am also praying that somehow this chiari specialist finds a way to cure his seizures. I know that is a long shot, but I pray everyday that there is some duh answer out there that everyone has just overlooked. I hope and pray that he doesn't not have to deal with them the rest of his life. But for now, he is a very happy, and active 7-year-old!
